Le Poisson Volant, conceived by Bertrand Chauveau, chef and co-founder, offers hearty yet refined cuisine, crafted in collaboration with chef Yanxin Yin.

Here, Bertrand Chauveau pursues a culinary approach rooted in respect for ingredients and a spirit of sharing, while Yanxin Yin, trained in Xi’an, in central-western China, and later in Lanzhou, in Gansu Province in the country’s northwest, brings his expertise in Asian cuisines and their traditional techniques. The menu places a strong emphasis on Chinese culinary classics, while also making room for more personal creations and Franco-Asian flavor combinations.

Starting at 11 p.m., Le Poisson Volant gradually shifts gears to become a club until the early hours of the morning. Conceived as a true cinematic capsule, the space evolves throughout the night, from restaurant to bar to club, in a seamless transition where spatial and temporal boundaries gradually blur. The result is an experience where architecture, lighting, sound, and cuisine evolve together as the night unfolds.
